500g wholemeal flour
1/8 tsp salt (adjust to your preference)
1 level tsp dried yeast
400 ml warm water ( about 40°C )
Put warm water and yeast in a bowl and keep warm until frothy (about 10 mins.) Add all the flour and mix well. The consistency should be such that it will just drop off the spoon. Put all mixture into a greased bread tin and leave somewhere warm to rise for about 30 mins. (If you leave it too long it can sink again in which case you are best mixing again and letting it rise a second time otherwise your loaf will either be hollow or soggy) Bake in a very hot oven for about 20 - 30 mins. When bread is done it should come away from the sides of the tin easily. To release it from the base (if necessary) give it a smart bang on the floor and then it will fall out. Tip out onto a wire grid to cool and hide the butter or most of it will be eaten before it cools!
